Cinnamon and Cassia, are they the same thing?
This once ancient commodity is now one of the most common staples in any kitchen. Its versatile in way beyond the imagination. This spice dates back to the 15-16th century.
Much like Cassia but are not the same thing otherwise known as Chinese Cinnamon. In some countries cinnamon and cassia are used interchangeably. Cassia is thicker, coarse, harsher ‘cinnamon’
Cinnamon: Name: Quills are the cinnamon sticks. Quills are actually rolled barks of the tree.

Cassia- slightly sweet, bitter astringent taste
Cinnamon- sweet, woody
