Pizza making in Italy. Nothing is more simple than a wood fired oven. It often seems worth standing in front of the firey inferno. The temperature and hot stone are crucial keys to creating the perfect crust.

Pizza Dough:

Flour 680 grams

Water 480 grams

Salt 10 grams

Yeast 11 grams

Olive Oil 15 grams

Place water and yeast together and whisk. Be sure that your water is not cold or too hot. Luke warm is preferred. Add flour and salt to a mixing bowl and using the dough hook, slowly incorporate water/yeast mixture, followed by olive oil. Mix on low until a window is achieved. This can take up to 10 minutes.

-oil a bowl and allow the dough the rise. Be sure to cover with plastic wrap or a towel to ensure the dough does not dry out.
